Abstract
In preparing for the seventh edition of this book, I repeated the walk I had taken for the sixth edition from Waterloo Station to Hixter Bankside to see how the food service sector had changed in the intervening six years. As before, I travelled by train from Guildford, where the University of Surrey is based, to Waterloo Station and then walked from there - a walk of about fifteen minutes covering a distance of less than a mile. Given the fast pace of the food service sector and the impact of both the pandemic and the war in Ukraine on the hospitality industry, I expected to find some significant changes, starting with the most obvious that Hixter Bankside had closed and been replaced by Brix.
