Abstract
This chapter highlights a selection of trends affecting food and beverage managers. While necessarily selective, it offers an initial insight into some of the emerging issues shaping the industry. The significance of these trends will vary across different sectors and countries, but the chapter provides a solid foundation for understanding the basics and points you toward resources for exploring specific topics in greater depth. We focus on key issues across four main areas: trends in consumer behaviour, sustainability, business ethics, and technology. Within those areas we explore trends such as: innovations in revenue management, the rise of plant-based foods, digital transformation, sustainability initiatives, personalised nutrition, functional foods, innovative beverages, self-service kiosks, changing consumer mindsets, and the importance of transparency in food sourcing.
