Abstract
We live in a world where, in the developed world in particular, the ageing population is increasing and food professionals will need to address the needs of older generations now and in the future. Food for the Ageing Population is a unique volume which reviews the characteristics of the ageing population as food consumers, the role of nutrition in healthy ageing, and the design of food products and services for the elderly. The first section of the book covers the understanding of older people as consumers of food and beverages, the second section covers extending functionality into later life, and the final section will highlight developing food products and services for older people.
